Orange Roughy stuffed with crab just might become your new favorite dinner. And best of all, it takes just 10 minutes to go from fridge to table.
Crab Stuffed Orange Roughy
Start to finish: 10 minutes
Hands on time: 7 minutes
2 Crab stuffed orange roughy filets
Salt and freshly ground black pepper
2 tablespoons extra virgin olive oil, divided
Preheat broiler to high. Place rack so that it’s on the second highest rung.
Salt and pepper the fish.
Heat 1 tablespoon of the oil in a large skillet over medium-high heat until it shimmers and add the fish to the pan. Saute the fish for about 3 minutes and drizzle over the remaining tablespoon of oil. Transfer the pan to the broiler and broil for about 4 or 5 minutes or until the fish is cooked through and the crab is lightly browned. Transfer the fish to serving plates and serve with your choice of sides. (the green beans with sun-dried tomatoes from the To-Go case would be delicious)
