No need to boil pasta in this recipe as the pasta salad is already made up for you. Good cold but maybe better hot, the Deluxe Greek Pasta from the serve yourself Take-Out salad bar includes pasta, vegetables and cheese…all you need to add is a little chicken to call it dinner.
Sautéed Chicken Breast with Greek Pasta Salad
Start to finish: 20 minutes
Hands on time: 20 minutes
4 skinless, boneless chicken breasts, cut down into bite-sized pieces
Salt and freshly ground black pepper
1 tablespoon olive oil
1 clove garlic, minced
1 large plus 1 medium container Deluxe Greek Pasta Salad from the serve yourself Take-Out salad bar
1/4 cup chicken broth or water
Salt and pepper the chicken.
Heat a large skillet over medium high heat and add the olive oil. When the oil shimmers, add the garlic and chicken to the pan and toss to combine it well. Saute the chicken, tossing every now and then to promote even cooking for about 5 minutes or until the chicken is cooked through. Transfer the chicken to a plate and keep it warm.
Add the pasta to the hot pan and warm it over medium heat for about 3 minutes. The cheese will melt.
Add the broth, cover, and cook for another 2 minutes to heat it through.
Mound the pasta onto 4 heated plates and top with the chicken. Serve hot.
