We’re in the midst of summer, and that means fresh herbs are plentiful! We’re always looking for new ways to use fresh herbs, so we asked Bill Krukemeyer, Produce Manager at Heinen’s Hudson, for his favorite recipes. The best part? They’re all so simple!
Basil is my favorite herb and the one I use the most often. It’s so versatile. Here’s one of my favorite recipes using basil that’s a little twist on a Caprese salad: core a small tomato, stuff it with a mozzarella ball and basil, and finish it off with a drizzle of Garlic Expressions dressing. I roast it on the grill in the summer and the oven in the winter, but you could also eat it raw. These are great little appetizers for a party, snacks or side dishes to your main meal. I suggest this recipe to customers a lot. Pizza on the grill with fresh basil is also really good! For those of you who want a little more tang than basil offers, arugula is a good substitute.
I use mint a lot too. It’s perfect for fruit salads – mine is cantaloupe, watermelon, feta and the mint. I use mint in my drinks too, of course! My wife recently made a great drink for us that was champagne, strawberries and crushed mint. Super simple, but tasty and very refreshing on a summer night.
Cilantro is another herb we get locally, and it’s a popular one with our customers. Cilantro is a must-have for salsas and guacamole, but I also like it with corn. I make a salad of corn, tomato, cilantro and lime juice. Another thing I do is grill corn that’s been brushed with a mixture of lime juice and cilantro. Brush the corn right before it goes on the grill for the best results. Cilantro is also good in wraps and salad. One of the associates at our Hudson store makes a lettuce wrap filled with chicken, cilantro, mint and a soy sauce base.
All of these herbs are great for making summer dishes and salads. Get creative and use your imagination to come up with your own delicious recipes!
