Arctic Char with Mixed Kale, Lemon, Parmesan and Walnuts

Arctic Char is salmon’s more subtle brother; not quite as strong tasting but still delicious and loaded with omega-3’s. To make things even more healthy add a dose of kale, Parmesan and toasted walnuts for texture, crunch and even more protein. A delicious, healthful dinner this simple to prepare is easy enough to keep on the menu each and every week.

Arctic Char with Mixed Kale, Lemon, Parmesan and Walnuts

Start to finish: 10 minutes
Hands on time: 10 minutes

Ingredients:

Two 8-oz Arctic Char filets
Salt and freshly ground black pepper
1 tablespoon olive oil
8 oz Two Kales with Lemon, Olive Oil, Toasted Walnuts and Parmesan from the To Go Case
1/3 cup chicken broth
1/2 lemon

Preparation:

Salt and pepper the Arctic Char filets.

Heat the olive oil in a large skillet over medium-high heat. When the oil shimmers, add the fish to the pan, skin side up. Brown the fish for 3 minutes. Flip it over and cook for another 3 minutes on the second side. Transfer the fish to two heated plates.

Add the kale mixture to the hot skillet along with the chicken broth and cook until the kale wilts slightly, about 1 minute (the cheese will melt which is fine). Squeeze the lemon over the top and mix it up.

Divide the kale between the two plates. Serve hot.
