October is American Cheese Month, and what better way to celebrate than with a visit to Wisconsin, our leading cheese producing state and America’s Dairy Land.
With a commitment to quality and excellence in all that they do Wisconsin Cheesemakers show their passion for their cultural past, their environment and terroir, their craft and their relationships with others as they produce award-winning artisan and specialty cheese selections.
We first visited Joe Widmer of Widmer’s Cheese Cellars, which has been producing cheese for more than 90 years. Widmer is a 3rd generation cheesemaker of Swiss descent, who produces small batch, traditionally made award-winning cheeses. He is a certified Master Cheesemaker, the highest ranked cheese certification in the USA, and has won numerous awards for his Cheddar cheeses, and Wisconsin Brick and Colby cheese originals. Incidentally, both of these cheeses were invented in Wisconsin in the late 1800’s. Joe’s motto: “…Accept nothing less than the best….” His commitment to tradition and quality produces Brick, Colby and Cheddar cheeses of exceptional flavor and richness.
As we leave Joe Widmer, we travel to Carr Valley Cheese to visit yet another Master Cheesemaker, Sid Cook. Steeped in family tradition, Carr Valley Cheese has been producing hand-crafted, award-winning cheeses for more than 125 years and showcases a unique blending of Old World craftsmanship and modern day cheese making innovation. Here again, the commitment to quality and sustainable practices produces artisan and specialty “one-of-a-kind” American Originals. Sid and his family craft over 80 different award-winning cheeses highlighting not only cheddars made from cow milk, but also a variety of goat, sheep and mixed milk blended cheeses. We are eagerly awaiting the yearly Autumnal arrival of Wildflower Cheddar from Carr Valley Cheese, which is to be delivered to stores by month’s end. We can hardly wait!
