Make School Lunches Fun with Color

CELEBRATE COLOR WITH BACK TO SCHOOL LUNCHES!

It’s that time of year again, where we trade in our flip-flops and sunglasses for lunch boxes and backpacks. Make the transition back to school easy on the parents and FUN for the kids. One sure way is to get your kids involved in packing their own lunches by celebrating color! Have them load up their lunches with all sorts of delicious fruit and veggie snacks that are easy to make and even easier to eat! For added fun, challenge them to see how many different colors they can pack everyday. When they get home, ask them how many colors they gobbled down and continue the colorful celebration into dinnertime!

Fruits and veggies are EASY to pack in lunches and add fun colors. Here are some quick and easy ways to prepare your favorites. And don’t forget to add the most important ingredient of all – FUN


Go Green

Add a fun and flavorful splash of Green into your child’s lunch by cutting up cucumber coins in place of potato chips and other snacks.

Purple Has Power

Add purple cabbage SUPER SLAW to any sandwich, wrap or taco! Here’s how to make this powerful purple treat:

  • 4 cups shredded purple cabbage
  • 2 Tbs olive oil
  • Juice of 1 orange
  • Juice of half a lemo
  • Pinch of salt
  • Optional: a dash of dijon mustard

Place the cabbage in a large bowl, in a separate smaller bowl whisk remaining ingredients together. Combine the shred and dressing (to taste) just before serving.

Red is Radical

Pack a Tomatobob! Skewer 1 cherry tomato, 1 mini mozzarella ball and 1 basil leaf on a toothpick. Kids and adults alike are sure to love this tasty and healthy snack that’s great for any occasion.

Orange Up

Turn an orange pepper into a water drinking cup. Drink the water, then eat the cup!

Hello Yellow!

Make chickpea popcorn and eat as a snack or a salad topping! Here’s how:

Rinse and drain 1 15oz can of chickpeas then coat with 1 tbs. of olive oil. Heat the oven to 450F and roast coated chickpeas for 30-45 min until the chickpeas are golden. Allow chickpeas to cool completely then season with salt and pepper & start popping!

Tip: Make it fun to shop for fruits and veggies. Give kids age-appropriate responsibilities. When you’re at the store, have your kids shop for all the red fruits and veggies. Or have your older kids write down the fruits and veggies they’d like the next time you go to the store. And when you get home from the store, see who can put the fruits and veggies away the fastest.
