Parmesan Chicken Patties with Green Apple and Radish Salad

Chicken patties make me think of spring and when topped with a green apple salad spiked with radish and blue cheese, they make me think of delicious. Add some frozen sweet potato fries and call it dinner.

Start to finish: 25 minutes
Hands on time: 10 minutes

Ingredients

One 20 ounce bag Alexia Sweet Potato Fries with Sea Salt
4 Parmesan Chicken Burgers from the Specialty Meats Case
Salt and freshly ground black pepper
2 tablespoons olive oil
2 cups Green Apple and Radish Salad with Blue Cheese from the Take-Away Salad Bar

Preparation

Preheat oven to 400°F.

Spread the fries out on a parchment lined sheet pan and bake in the preheated oven for 15 to 20 minutes or until crispy.

Salt and pepper the chicken patties.

While the fries bake, heat a 12-inch skillet over medium high heat and add the olive oil. When the oil
simmers add the chicken patties to the pan and cook for 3 minutes. Turn and cook another 2 minutes depending on how large and thick the patties are. If thick, cover the pan with a lid, turn off the heat and let them continue to cook in the hot pan for another 2 minutes.

Transfer the chicken to 4 heated plates and top with the Green Apple Radish Salad and fries on the side.
