Agnello E Feta Pizza

Preparation time: 1 1/12 hours
Cook time: 6-8 minutes

Ingredients:

Pizza

  • 4-1/2    ounces pizza dough
  • 1          teaspoon minced garlic
  • 2          teaspoons olive oil
  • 5          ounces feta cheese
  • 5          ounces Shepherd’s Pride lamb sausage (recipe follows)
  • 3          ounces pitted or cracked olives
  • 4          tablespoons minced fresh oregano
  • 4          ounces roasted red peppers
  • 1          teaspoon chopped parsley

Shepherd’s Pride Lamb Sausage

  • 1/4       pound ground Shepherd’s Pride lamb
  • 1          teaspoon minced garlic
  • 1          teaspoon coarse kosher salt
  • 12        large fresh mint leaves, chopped
  • 2          tablespoons extra virgin olive oil

Preparation

American Lamb Sausage

  1. In a bowl, combine lamb, garlic, salt and mint. Paddle for 3 minutes on medium speed with a mixer; allow to rest for 1 hour in refrigerator.
  2. Heat sauté pan to medium-high heat with a tablespoon oil; add sausage. Don’t stir at first; allow the bottom of the mass to caramelize. When you can see some color on the lamb then break it up and flip.
  3. Cook until no red remains. Remove sausage; drain on a paper towel. Allow to cool or put directly on your pizza.

Pizza

  1. Open the pizza dough; paint with garlic and oil. Add feta, sausage, olives cracked with orange zest, oregano and peppers (cooked in the oven and cut).
  2. Bake at 500°F to 550°F for about 6 to 8 minutes in a home oven. Bake at 700°F to 1000°F for 1 to 3 minutes in a professional gas-fired or wood oven.
  3. Top with parsley and enjoy.
