Weekend mornings have different starting times for us all, especially with busy summer schedules. You may be setting an early alarm or grabbing a chance to snooze for a few extra hours. Either way, a morning meal awaits and, if time allows, a leisurely brunch is something to take advantage of.
Fresh fruit is the perfect addition to your midday meal. How about incorporating it into your beverages, too? We’re not suggesting blueberries in your coffee, but the addition of fruit to a Mimosa or Bellini gives you extra flavor to enjoy. Peach Basil Bellini
Ingredients [yields four drinks]
- 2 Peaches
- Basil (2-3 leaves)
- Peach Basil Simple Syrup*
- Prosecco or Champagne
–use sparkling water for a non-alcoholic option
Cube peaches and muddle with basil leaves. Divide the mixture into four glasses and add about 1 tsp. Peach Basil Simple syrup [recipe below] to each drink. Top it all off with your beverage of choice and enjoy!
*Peach Basil Simple Syrup
- 1 cup sugar
- 1 cup water
- Basil (1-2 leaves)
- 2 Peaches, sliced
Heat sugar and water until the sugar is dissolved, about five minutes. Stir in peaches and basil leaves and remove from the heat. Allow to cool at room temperature for about an hour. Strain and keep refrigerated in a sealed container. Peach Basil Simple Syrup will keep, covered and chilled, for about 2 weeks.
