Asian Beef and Noodles Salad with toppings

Ingredients

  • 1 package Linguine Noodles, cooked, rinsed, and cooled
  • 1/2 head Sliced Napa Cabbage
  • 1/2 head Sliced Purple Cabbage
  • 1/2 bag Baby Spinach
  • 1 whole Red Bell Pepper, sliced thin
  • 1 whole Yellow Bell Pepper, sliced thin
  • 1 whole Orange Bell Pepper, sliced thin
  • 1 bag Bean Sprouts (also called Mung Bean Sprouts)
  • 2 cups  Spiral Zucchini (found in the refrigerated produce case)
  • Up to 1 Bunch Chopped Cilantro, to taste
  • 3 whole Scallions, sliced
  • 1 cup Whole Cashews, lightly toasted in skillet
  • 1 pound Two Brothers Eye of Round, sliced thin and cut into 1-inch strips

Toss together all of the ingredients in your preferred order. For dressing, I like Heinen’s bottled Ginger Sesame dressing but if you want to make your own dressing here’s a great recipe to mix together…

  • 1 whole Lime, juiced
  • 8 Tbsp. Olive Oil
  • 8 Tbsp. Soy Sauce
  • 2-3 Tbsp. Sesame Oil
  • 1/3 cup Brown Sugar
  • 3 Tbsp. Fresh Ginger, chopped
  • 2 cloves Garlic, chopped
  • 2 whole Hot Peppers or Jalapenos, chopped
  • Chopped Cilantro

Thai Beef Salad

Yield: 4 servings

Thai Beef Salad

Ingredients

  • 3 Tbsp. fresh lime juice
  • 2 Tbsp. fish sauce
  • 2 Tbsp. extra-virgin olive oil
  • 1½ tsp sugar
  • ¼ tsp salt
  • 6 cups roughly chopped romaine
  • 1 lb Two Brothers Roast Beef, sliced
  • 1 sweet red pepper, thinly sliced
  • 1 cucumber, thinly sliced
  • ½ small red onion, thinly sliced
  • 1 cup grape tomatoes, halved
  • 1 cup mint leaves
  • 1 cup cilantro leaves
  • 1 bird’s eye chile or jalapeño

Method

In a large bowl, whisk together lime juice, fish sauce, olive oil, sugar and salt. Gently toss with romaine, roast beef, sweet pepper, cucumber, onion, tomatoes, mint, cilantro and chile. Serve immediately.
