Wild Salmon and Shrimp Burger with Kale and Wheatberries

I frequently turn to wild salmon burgers as a dinnertime option because they are not only delicious, but good for you as well. Adding a flavorful grain-based salad studded with kale adds color and even more good for you reasons to cook this meal up for supper tonight.

Wild Salmon and Shrimp Burger with Kale and Wheatberries

Start to finish: 20 minutes
Hands on time: 20 minutes

4 Wild Salmon Shrimp Burgers or other seafood burger of choice
Salt and freshly ground black pepper
2 tablespoons olive oil
1 onion, chopped
2 cups chopped kale
1 clove garlic, chopped
1/4 cup water
1 lb Wheatberry Salad from Self-Serve Salads
Bruschetta Topping from Self-Serve Salads

Salt and pepper the burgers.

Heat a large skillet over medium-high heat and add the olive oil. When it shimmers add the burgers and cook them for 3 minutes. Flip them over and cook for another 2 minutes. Press to check for doneness. They should feel firm. Transfer the burgers to a plate and tent with foil to keep warm.

Return the pan to the heat and add the onion. Cook for one minute or until it begins to soften and add the kale, tossing it as it wilts. Once wilted add the garlic and water and continue to cook for another 2 minutes or until the kale is tender. Add the Wheatberry Salad and toss it with the vegetables until warmed through. Season to taste with more salt and pepper if desired.

Arrange the burgers and salad onto heated plates and top the burgers with the Bruschetta Topping.
Serve hot.
