Salade Niçoise is more than a salad. It's a savory meal that's been filling up hungry tummies for centuries. This beautiful plate consists of greens, potatoes, green beans, tomato and egg dressed in a mustardy vinaigrette while the peppers and tuna create a kind of chunky sauce on top. Just boil up the potatoes and green beans and be transported to the south of France.

A frittata is my go-to dish when I need to get dinner on the table fast. And everything goes into a skillet which means just one pan to clean up. With all the lovely green asparagus, chunky sweet red pepper, spicy sausage and tender potato tucked inside, this is my take on the perfect frittata; lots of veggies on the inside with just enough egg to bind it all together.

On a recent trip to California’s Central Coast, I couldn’t help but be struck by a new generation of winemaking where long-forgotten varietals seemed new and cutting edge again. This was most evident with classic Rhone varietals like Marsanne, Roussane and Grenache Blanc. I was simply amazed that a tradition like winemaking could seem fresh and revolutionary.

When was the last time you have thought about your iodine intake? Most people have probably never given iodine much thought.  Although we don’t hear about this health-promoting trace element regularly does not mean that it is not an important part of our diets. Our bodies need iodine because it is absorbed by the thyroid gland to make and release hormones into our blood. These hormones are what help to regulate the way our metabolism functions.

The Superfood kale has been cultivated for over 2,000 years. A native to the Mediterranean area, the Brassica oleracea spread to other parts of Europe where it was widely consumed until the Middle Ages. Kale was an extremely important crop in Scotland because of its hardiness to the cooler climate. Kale was used as a generic term for dinner in Scotland and if you looked ill, you were told that you were "off of your kale". Kale remained an important crop until the potato became the top product grown.

You know the old cliché telling you to “listen to your gut”? Well, it’s actually true, except it is referring not only to intuition, but also to digestion. Some 2400 years ago, Hippocrates, the father of modern medicine, said that “All disease begins in the gut.” We are only now coming to understand the scope of this statement—and that he was absolutely correct.  The science is clear on the fact that gut health is crucial to overall health.

When it comes to your gut, people can underestimate what a healthy gut can really do for your body. The gut contains tons of bacteria, good and bad, but the key is to have much more good bacteria than bad. One way to help achieve a healthy gut is through taking probiotics. Probiotics can help suppress bad bacteria from growing in the gut and throw off the balance of good bacteria. When your gut is properly balanced with good bacteria, your immune system is stronger, your digestive tract is healthy and you can absorb minerals much more efficiently.
