Curried Squash & Chickpeas

Tiger Tiger Thai Red Curry Simmer Sauce

Heinen’s Produce Recipe Ready-Cubed Butternut Squash

Heinen’s Organic Garbanzo Beans

Heinen’s Baby Spinach

Heinen’s Cooked Organic White Rice



1. Heat large sauté pan with splash of Heinen’s olive oil until hot then add squash. Cook stirring occasionally until squash is lightly browned and tender.

2. Add simmer sauce and drained chickpeas. Bring to a simmer then add spinach to sauce.

3. Bring back to simmer and continue to cook until spinach is wilted.

4. Heat rice in microwave as directed. Top cooked rice with curry squash mixture.

5. Garnish with roasted pepitas and chopped cilantro.
