Strawberry Balsamic Chicken

Strawberry Balsamic Chicken

For the Chicken:

½ cup fresh strawberries, stem removed
½ cup olive oil + 2 tablespoons
¼ cup balsamic vinegar
1 ½ pounds boneless skinless chicken breasts
salt and pepper to taste

For the Strawberry Topping:

½ cup large diced fresh strawberries, stems removed
½ cup large diced mozzarella
2 tablespoons chopped fresh basil
2-3 tablespoons balsamic glaze
salt and pepper to taste

Procedures:

1. For the chicken: Add the strawberries, ½ cup olive oil, balsamic vinegar, salt and pepper to a blender and blend on high speed until smooth.

2. Transfer the mixture to a plastic bag and place the chicken breasts inside. Seal the bag and move it around to completely coat the chicken.

3. Marinate in the refrigerator for at least 30 minutes or overnight.

4. Add the 2 tablespoons olive oil to grill pan over high heat and once it begins to lightly smoke add the chicken breasts to the pan. Do not add the marinade.

5. Turn the heat down to medium and cook for 5-7 minutes per side or until browned and cooked throughout. Remove and set aside.

6. Topping: Combine the strawberries, mozzarella, basil and salt and pepper together in a bowl.

7. Top off the chicken with the strawberry topping and drizzle on the balsamic glaze and serve.
