Sesame Crusted Mahi Mahi with Orange Glaze, Bok Choy and Spicy Noodles

Ingredients

Mahi Mahi:
1 tablespoons of sesame oil
two 6 ounce fillets of Mahi Mahi
3 tablespoons of sesame seeds
1 teaspoon of minced fresh ginger
1/2 cup of honey
juice of 2 oranges
Kosher salt and fresh cracked pepper to taste

Bok Choy:
1 tablespoons of sesame oil
2 teaspoons of minced ginger
1 large head of bok choy sliced into long wedges
2 cups of chicken stock
Kosher salt and fresh cracked black pepper

Spicy Noodles:
1 tablespoons of sesame oil
2 cups of softened rice stick noodles
1/4 cup of sliced green onions
1/2 cup of chili garlic sauce
1/4 cup of soy sauce
1/4 cup of Mirin or Sherry


Preparation


Mahi:

Season the mahi mahi on all sides with salt and pepper. Next, sprinkle sesame seeds all over 1 side of the fish. In a medium sized sauté pan on medium-high heat in 1 tablespoon of sesame oil sauté the fish sesame seed side down and cook until golden brown on each side and cooked throughout.

After the fish is cooked, remove from the pan and pour in a bit more sesame oil and caramelize the ginger. Once brown, add in honey and fresh orange juice and cook until it becomes very thick.

Bok Choy:
In a separate large hot sauté pan with sesame oil, caramelize the ginger. Once brown, add in the bok choy and sauté for 2 to 3 minutes. Next, add in the chicken stock, salt and pepper and braise for 6 to 8 minutes on low heat.

Spicy Noodles:
In a medium sized sauté pan on high heat with sesame oil, sauté the green onions for two minutes and then add in chili-garlic sauce, soy sauce and mirin and cook for 3 to 4 minutes on medium heat. Next, add in cooked noodles and toss.

To Plate:
Serve the spicy noodles alongside the bok choy and crusted mahi mahi. Drizzle the orange glaze over the top of the fish.
