How to Cook Crispy Fish & Chicken

Ingredients

For the Fish:
8 ounce fillet of fresh fish
1 tablespoon of oil with a smoking point between 375° and 400°
1 tablespoons of unsalted butter
juice of ½ lemon
salt and pepper to taste

For the Chicken:
1 skin on chicken breast
1 tablespoon of oil with a smoking point between 375° and 400°
1 tablespoons of unsalted butter
3 to 4 garlic cloves
4 to 6 sprigs of fresh thyme
salt and pepper to taste

Preparation

1. For the Fish: Season the fish on all sides with salt and pepper.

2. Next, heat a skillet over medium high heat and add in the oil. Once the oil begins to lightly smoke add in your seasoned fish and then the butter immediately. Cook the fish for 4 to 5 minutes and then flip it over.

3. Baste the fish and cook for a further 3 to 4 minutes or until golden brown and cooked throughout.

4. Deglaze with juice from ½ lemon and serve.

5. For the Chicken: Preheat the oven to 350°.

6. Season the chicken on all sides with salt and pepper.

7. Next, heat a skillet over medium high heat and add in the oil. Once the oil begins to lightly smoke add in your seasoned chicken and cook for 3 to 4 minutes and then add in the butter, garlic and thyme and cook for another 2 to 3 minutes or until golden brown.

8. Flip the chicken over, cook for 2 minutes and then place in the oven at 350° for 8 to 10 minutes or until it is cooked throughout.

9. Slice and serve.
