Polenta with Veggie Ragu

Ingredients

de la Estancia Polenta Mix
Heinen's Vegetarian Sloppy Joe Mixture
Heinen's Diced Butternut Squash
Phillips Farms Sliced Mushrooms
Heinen's Shredded Gruyere

Preparation

1. Prepare polenta per directions on box for servings needed and keep warm.
2. In a saute pan with a splash of Heinen's Olive Oil over medium heat, saute butternut squash, until almost tender. Add mushrooms and vegetarian sloppy joe mixture.
3. Cook until heated through. Season with salt and pepper.
4. Spoon polenta into a bowl and top with sloppy joe vegetable mixture. Finish by sprinkling with shredded gruyere.
