BBQ Cauliflower Wraps with Apple & Kale Slaw

Battered and baked cauliflower florets generously tossed in Two Brothers BBQ sauce are the perfect base for an incredibly fresh and vibrant summertime wrap.

Whether you decide to batter the cauliflower florets for a coating similar to boneless wings or simply toss in spices and roast, you cannot go wrong. Cauliflower can easily take on any flavor you throw at it, which makes it a fantastic blank canvas for meat-free meals.

BBQ Cauliflower Bites

A sweet and tangy apple slaw is piled high around the cauliflower bites in addition to sliced avocado and a dreamy drizzle of ranch dressing. Each bite of this wrap carries a different punch that will keep vegetarians and meat eaters coming back for more.

BBQ Cauliflower Wraps with Apple & Kale Slaw


For the BBQ Cauliflower

  • 1 head of cauliflower, florets cut into bite-size pieces
  • 1 cup unbleached all-purpose flour
  • 1/2 tsp. garlic powder
  • 1/2 tsp. chili powder
  • 1/2 tsp. paprika
  • 1 1/2 cup buttermilk
  • 2-3 Tbsp. water
  • Two Brothers BBQ Sauce
  • Soft shell tortillas of your choice

For the Apple & Kale Slaw

  • 1 cup organic kale, finely chopped
  • 1 cup red cabbage, finally chopped
  • 1 Granny Smith apple, skin on, cut into matchsticks
  • 3 Tbsp. extra virgin olive oil
  • 1 lime, juiced
  • 1/4 tsp. garlic powder
  • 1/2 tsp. kosher salt
  • 1/4 tsp. black pepper
  • Drizzle of honey


For the BBQ Cauliflower

  1. Preheat oven to 425˚F.
  2. Line a large baking sheet with foil and spray with non-stick spray.
  3. In a medium bowl, whisk together the flour and spices.
  4. Add buttermilk, whisking together until batter forms. If it is very thick, add one Tbsp. of water at a time until it resembles pancake batter.
  5. Dip each cauliflower floret into the batter. Let excess drip off and place on prepared baking sheet.
  6. Bake at 425˚F for 20 minutes.
  7. Remove baking sheet from oven. Using tongs, pick up each cauliflower bite and place into an oven-safe baking dish and cover with Two Brothers BBQ sauce.
  8. Place back into the oven for 10 minutes to let the BBQ sauce set.
  9. If you’d rather omit the batter, simply toss the cauliflower in the garlic powder, chili and paprika and bake at 425˚F for 20 minutes. Toss in sauce and bake for another 10 minutes.

Note: The base of the batter may stick to the foil. Do not fret! The tops will stay on nicely and give that breaded texture of boneless wings.

For the Apple & Kale Slaw

  1. In a medium bowl, add the finely-chopped kale and cabbage along with the Granny Smith apple matchsticks.
  2. Add olive oil, salt, pepper, garlic powder and a drizzle of honey.
  3. Gently toss to coat the slaw and keep in fridge until you are ready to serve (2 hours max).

To Assemble the Wraps

  1. Use any tortilla that suits your taste. Place the BBQ cauliflower bites in the wrap.
  2. Pile on the apple & kale slaw and add sliced avocado and a generous drizzle of ranch dressing.
  3. Serve immediately.
