Tea Sandwiches 2 Ways

Tea sandwiches are festive and fun for any spring gathering, like a Mother’s Day luncheon, bridal or baby shower or Kentucky Derby viewing party!

A flavorful spread is key to a delicious tea sandwich. I love all of Heinen’s flavored cream cheese spreads, and I’m featuring two varieties in these recipes. I’m jazzing up their strawberry cream cheese with fresh lemon and basil to create Strawberry and Basil Tea Sandwiches, and opting for their scallion cream cheese (my favorite!) to add depth of flavor to Benedictine and Bacon Tea Sandwiches.

These sandwiches are best assembled right before serving, but the cream cheese spreads can be prepared and refrigerated up to a day in advance. I recommend Heinen’s white bread for the Strawberry and Basil Tea Sandwiches and their pumpernickel bread for the Benedictine Tea Sandwiches. Both can be found in Heinen’s Bakery Department.

Ingredients

For the Benedictine and Bacon Tea Sandwiches

  • 1 container Heinen's scallion cream cheese, softened
  • 2 Tbsp. mayonnaise
  • A few dashes of Heinen’s cayenne pepper, or to taste
  • ½ cup Heinen’s baby spinach, finely chopped
  • 4 oz. Heinen's CARE Certified bacon, cooked until crisp and crumbled
  • Salt and pepper
  • 8-10 slices Heinen’s pumpernickel bread
  • ½ large seedless cucumber, sliced into thin rounds

For the Strawberry Basil Tea Sandwiches

  • 1 container Heinen's strawberry cream cheese, softened
  • Zest of 1 lemon, plus 1 Tbsp. juice
  • 2 Tbsp. fresh basil, finely chopped
  • 8-10 slices Heinen’s white bakery bread
  • 2 cups fresh strawberries, thinly sliced

Instructions

For the Benedictine and Bacon Tea Sandwiches

  1. Mix together the cream cheese, mayonnaise, cayenne, chopped spinach and bacon. Season to taste with salt and pepper.
  2. Spread on a slice of pumpernickel bread, then top with the cucumber slices and another slice of bread.
  3. Slice the sandwich into triangles, cutting off the crust if desired.

For the Strawberry Basil Tea Sandwiches

  1. Mix together the cream cheese, lemon zest, lemon juice and basil.
  2. Spread on a slice of bread, then top with the strawberry slices and another slice of bread.
  3. Slice the sandwich into triangles, cutting off the crust if desired.
