Tips, video and photography provided by Heinen’s partner, Chef Billy Parisi.

Segmenting is the best way to serve your favorite citrus fruit and it’s incredibly easy to do. All you need is a sharp paring knife to get started.

How to Segment a Grapefruit

1. Start by slicing off the top and bottom of the grapefruit.
2. Lay it flat and carve downward to remove the skin and white pith.
3. Take the paring knife and slice each side of the membrane segment at an angle to remove.

How to Segment an Orange

1. Start by slicing off the top and bottom of the orange.
2. Lay it flat and carve downward to remove the skin and white pith.
3. Tilt the orange on its side and slice into 1/4-inch to 1/2-inch thick round segments.
