I am so thankful that the weather is turning and we can spend some more time outside and enjoy the beautiful Spring elements. We love cooking and eating outside and while those backyard BBQ get togethers may be postponed, I’m still cooking up some of my seasonal favorites.
I can’t tell you how many times a week we take home a rotisserie chicken from Heinen’s. They are so convenient and always delicious. We often eat it as is served with some vegetables or we cut it up and put it into other recipes like curry chicken or soup. It obviously makes for an excellent chicken salad and will absolutely help you save time making it.
I personally believe a little bit of sweetness helps cut the savory ingredients in chicken salad and drastically improves the flavor. You can add raisins or currants, but if you have some grapes laying around, then definitely use them. Adding nuts like pecans, pistachios or almonds is a nice touch, too.
This recipe is just so easy to make and definitely screams Spring and Summer, which we are so ready for.
Chicken Salad
Serves 6
Ingredients
- 1 chilled rotisserie chicken, skinned, boned and roughly chopped
- ½ red onion, peeled and small diced
- 4 celery stalks, small diced
- ½ cup sliced almonds
- 1 cup red grapes, cut in half
- ½ cup mayonnaise
- Salt and pepper to taste
Instructions
- Add all of the ingredients to a large bowl until completely combined and chill before serving.
