Instant Pot Apple Dumplings

Gone are the days of baking for hours only to enjoy a short few minutes of apple dumpling goodness. Chef Billy Parisi’s apple dumplings are made-from-scratch and reach golden perfection in just 10 minutes.

Ingredients

For the Filling

  • 2 each organic Granny Smith and Fuji apples, peeled, cored and large diced
  • 2 Tbsp. unsalted melted butter
  • 1 Tbsp. lemon juice
  • ¼ cup pecans, chopped
  • ½ cup light brown sugar, packed
  • 2 Tbsp. cornstarch
  • 1 tsp. cinnamon

For the Dough

  • 2 ½ cups all purpose flour
  • 1 ½ sticks unsalted butter
  • Pinch of salt
  • Pinch of salt

For the Sauce

  • 1 cup light brown sugar
  • ½ stick unsalted butter
  • 1 cup apple cider

Instructions

For the Filling

  1. In a large bowl, mix together all of the filling ingredients and place in the refrigerator until ready to use.

For the Dough

  1. Add the flour, butter and salt to a food processor and pulse until the butter is the size of rice.
  2. Slowly drizzle in the water until the dough forms a meal.
  3. Transfer the dough to a clean surface dusted with flour and roll out to 12”x18”.
  4. Evenly cut the dough into 4 squares.
  5. Evenly add the apple filling to the center of each piece of dough and bring up the ends of the dough and pinch to form a pouch. Set aside.

For the Sauce

  1. Add the brown sugar and butter to an Instant Pot set to the saute function and cook until completely melted.
  2. Add in the apple dumpling pouches right on top of the sauce and pour in the apple cider.
  3. Cook on pressure cook for 10 minutes. Make sure it is sealed.
  4. Release the seal valve, remove the top and serve with ice cream.
