Watermelon Feta Steak Salad

Create this flavorful recipe all summer long. This is an incredibly easy and delicious salad to make.


For the Dressing:

¼ cup of white balsamic vinaigrette
1 teaspoon of Dijon mustard
1 tablespoon of honey
½ cup of olive oil
Kosher salt and fresh cracked pepper to taste

For the Salad:

4 ounces of skirt or flank steak
1 tablespoon of olive oil
2 cups of packed baby arugula
2 cups of packed baby spinach
1 cup of medium diced watermelon
½ cup of sliced cucumbers
¼ cup of crumbled feta cheese
1 tablespoon of chiffonade fresh basil
optional garnishes: sliced red onions, micro-greens or sprouts
Kosher salt and fresh cracked pepper to taste


1. Dressing: Whisk together all of the ingredients in a medium-size bowl until emulsified and set aside.

2. Salad: Preheat the grill to high heat.

3. Drizzle olive oil all over the steak and season it with salt and pepper.

4. Add the steak to the grill and cook it for 2 to 4 minutes per side or until it has grill marks and a medium-rare internal temperature. Remove the grill, rest for 2 minutes and thinly slice against the grain.

5. Add the greens to a large bowl and top off with the sliced steak, watermelon, cucumbers, feta cheese, basil, garnishes, salt and pepper and the vinaigrette.

6. Serve
