Why You’ll Love This Recipe
- It’s customizable. Whether you’re a fan of a spicy salami, or an authentic prosciutto, this recipe is highly customizable, and easily allows you to pick and choose your favorite elements. We recommend throwing in pimento-stuffed olives to help balance a saltier skewer.
- It uses sweet homemade honey balsamic vinegar. You can drizzle these stunning skewers in a bit of honey balsamic vinegar. The natural sweetness of the honey pairs well with the savory bites of meat, cheese, and vegetables, making for a satisfying and sophisticated snack.
- It’s a perfect summer appetizer. Not only do these skewers taste great, they look great too! Place these vibrant antipasto skewers on a platter and bring to your next get-together.

- 1/4 cup fresh green onions, chopped
- 8-10 wooden skewers
For the Dressing
- 2 tsp. Heinen's honey
- 1/4 cup Heinen's extra virgin olive oil

Instructions
- Cook the tortellini according to the package instructions.
- While the tortellini cooks, lay out the skewer ingredients on a large cutting board.
- Once the tortellini is done cooking, drain and let cool.
- To prepare the skewers, start with a cherry tomato, followed by the green and Kalamata olives, tortellini, roasted red peppers, basil, mozzarella, tortellini, two more olives and another tomato. Repeat this for each skewer.
- In a Mason jar, combine the honey, olive oil, balsamic, fresh herbs, salt and pepper. Mix well.
- Drizzle the dressing over the skewers and sprinkle with more fresh herbs.
- Serve immediately or store in the fridge until ready to serve.
Notes
- You can use any of your favorite ingredients like artichokes, banana peppers, pepperoncinis, pepperoni, prosciutto or any other type of olive.
- I like the dressing drizzled over the skewers, but they also taste great with Heinen’s balsamic glaze or without any dressing at all.
