Ingredients

For the Bowl

  • 2 medium sweet potatoes, cubed into ½-inch pieces
  • 3 Tbsp. Heinen's extra virgin olive oil, divided
  • ¼ tsp. Heinen's ground cinnamon
  • 1 lb. Heinen's CARE Certified ground beef
  • 1 Tbsp. tomato paste
  • 2 cups cottage cheese
  • 2 avocados, sliced
  • Mike's Hot Honey, for serving

For the Taco Seasoning

  • 1 Tbsp. Heinen's chili powder
  • 1 tsp. Heinen's ground cumin
  • 1/2 tsp. Heinen's smoked paprika
  • 1/2 tsp. Heinen's oregano
  • ¼ tsp. Heinen's garlic powder
  • ¼ tsp. Heinen's onion powder
  • ¼ tsp. salt
  • ¼ tsp. black pepper
  • A dash of cayenne pepper

Instructions

  1. Toss the sweet potatoes with 2 tablespoons of olive oil, cinnamon, and a pinch of salt. Spread them in a single layer in an air fryer basket. Cook at 400°F for 10–13 minutes, shaking the basket halfway through, until tender and golden on the edges. Work in batches if needed.
  2. In a small bowl, whisk together the ingredients for the taco seasoning.
  3. Heat the remaining tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart, until browned. Stir in the taco seasoning and tomato paste.
  4. In serving bowls, divide the beef, sweet potatoes, cottage cheese, and avocados. Drizzle the hot honey and enjoy.
