Ingredients

Cinnamon Graham Crumble

  • ¾ cup graham cracker crumbs
  • 1½ Tbsp unsalted butter, melted
  • 1 Tbsp brown sugar
  • ¼ tsp cinnamon

No-Bake Mascarpone Cheesecake

  • 4 oz full-fat cream cheese, room temperature
  • 4 oz mascarpone cheese, room temperature
  • ¼ cup brown sugar
  • ½ tsp lemon zest
  • 1–2 tsp lemon juice

For Assembly

  • 1 cup fruit preserves or jam (such as strawberry or raspberry)

Instructions

  1. Make the graham crumble: In a small bowl, mix the graham cracker crumbs, melted butter, brown sugar, and cinnamon until evenly combined. Set aside.
  2. Make the cheesecake: In a large bowl, mix the cream cheese and mascarpone with a spoon until completely smooth. Add in the brown sugar, lemon zest, and lemon juice until fully combined and creamy.
  3. Assemble the parfaits: Spoon a layer of graham crumble into the bottom of small glasses, followed by a layer of cheesecake and a spoonful of fruit preserves. Repeat the layers once more, finishing with cheesecake and a sprinkle of graham crumble.
  4. Garnish and serve: Top with fresh fruit if desired. Refrigerate until ready to serve; the parfaits will continue to firm up as they chill.
