What’s For Dinner? Lentil Sloppy Joes

Ingredients

  • Dei Fratelli Homestyle Sloppy Joe Sauce
  • Heinen's Organic Lentils
  • Silver Hills Bread The Big 16
  • Heinen's Tri-Color Diced Peppers
  • Heinen's Diced Yellow Onions
  • Arugula Microgreens

Instructions

  1. Place a pot over medium heat.
  2. When hot add a splash of oil and the peppers and onions and sauté until soft.
  3. Rinse and drain the lentils before adding them to the pot with some of the Sloppy Joe sauce.
  4. Simmer gently while stirring often until the mixture thickens a little bit.
  5. Spoon the lentils onto the bread and top with some of the arugula micro greens and another piece of bread.
  6. Serve with a side salad, we suggest using Heinen’s Power Greens with a drizzle of Biora Kombucha Balsamic Dressing.

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
