What’s For Dinner? Minestrone Soup

Ingredients
- Volpi Chopped Uncured Pancetta
- Barilla Ditalini Pasta
- Heinen's Diced Mirepoix
- Heinen's Chicken Culinary Stock
- Heinen's Organic Baby Kale
- Hanover Cannellini Beans
- Heinen's Diced Tomato
- Heinen's Imported Parmigiano Reggiano, Grated Small
Instructions
- Cook ditalini according to directions on the package. Drain and set aside.
- Place the pancetta and a splash of oil in a soup pot.
- Place the pancetta over medium heat and cook. When the pancetta is crispy, add the mirepoix to the pot and cook until soft.
- Add the chicken stock, rinsed and drained beans, and diced tomatoes to the pot and bring to a simmer.
- Just before serving, add the kale and cooked pasta to the pot and simmer briefly.
- Ladle the soup into serving bowls and top with parmesan cheese.
- Serve with Oyster crackers or your favorite crusty bread.
