This Minestrone Soup combines Volpi chopped pancetta, ditalini pasta, Heinen’s diced mirepoix, chicken stock, kale, cannellini beans, and diced tomatoes for rich, comforting flavor. Finished with a sprinkle of imported Parmigiano Reggiano, it’s a hearty, satisfying soup ready in minutes.

What’s For Dinner? Minestrone Soup

Ingredients

  • Volpi Chopped Uncured Pancetta
  • Barilla Ditalini Pasta
  • Heinen's Diced Mirepoix
  • Heinen's Chicken Culinary Stock
  • Heinen's Organic Baby Kale
  • Hanover Cannellini Beans
  • Heinen's Diced Tomato
  • Heinen's Imported Parmigiano Reggiano, Grated Small

Instructions

  1. Cook ditalini according to directions on the package. Drain and set aside.
  2. Place the pancetta and a splash of oil in a soup pot.
  3. Place the pancetta over medium heat and cook. When the pancetta is crispy, add the mirepoix to the pot and cook until soft.
  4. Add the chicken stock, rinsed and drained beans, and diced tomatoes to the pot and bring to a simmer.
  5. Just before serving, add the kale and cooked pasta to the pot and simmer briefly.
  6. Ladle the soup into serving bowls and top with parmesan cheese.
  7. Serve with Oyster crackers or your favorite crusty bread.

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
