What’s For Dinner? Stuffed Acorn Squash

Ingredients

  • Acorn Squash
  • Farro with Beans and Greens
  • Primal Kitchen Greek Vinaigrette
  • Mackenzie Herbs de Provence Chevre

Instructions

  1. Preheat oven to 400˚F. While the oven is heating, place the squash cut side up on a sheet tray. Season with salt and pepper and roast in the oven until tender.
  2. Heat the farro in the microwave until hot.
  3. To serve, fill the squash halves with the farro, beans and greens and chevre and return to the oven briefly to soften the cheese.
  4. Drizzle with vinaigrette to finish.

In 1929, Joe Heinen opened the doors of a small butcher shop on the east side of Cleveland, Ohio, aiming to establish himself as the city’s purveyor of quality meats. As customers came into Heinen’s new shop for their meat purchases, they began asking him to carry groceries as well. Joe added homemade peanut butter, pickles and donuts and by 1933, business had grown enough to include a line of produce and canned goods. Heinen’s Grocery Store was born.
