Ingredients

  • 3 Tbsp. avocado oil
  • 1 lb ground pork
  • 1 cup sliced green onions
  • 4 garlic cloves (finely minced)
  • 1/4 cup oyster sauce
  • 2 Tbsp. soy sauce
  • 5 cups cooked Jasmine rice
  • 2 cups frozen mixed vegetables
  • 4 large whisked eggs
  • Garlic-chili crunch, for garnish
  • Sliced green onion, for garnish
  • Daily Bites Vegetable Spring Rolls

Instructions

  1. Add 1 Tbsp. avocado oil to a large wok over high heat.
  2. Once smoking, add in the pork and cook while breaking it up until lightly browned and cooked throughout.
  3. Next, add in the green onions, garlic and 1/2 oyster sauce. Stir-fry for 1 to 2 minutes.
  4. Add in the rice and stir-fry for another additional minute.
  5. Pour in the remaining oyster sauce, soy sauce and vegetables and stir-fry for 1 to 2 minutes.
  6. Move the fried rice to one side of the wok and in the other side, add the remaining 2 Tbsp. of avocado oil and 4 whisked eggs.
  7. Let the eggs sit for 1 minute before scraping and scrambling them until they are mostly finished. Fold all ingredients together.
  8. Serve the pork fried rice in a bowl with additional sliced green onions, garlic-chili crunch and alongside vegetable spring rolls.
