Cinnamon Apple Crumble Loaf Cake

Featuring a soft cake base, crisp cinnamon crumble and delicious maple glaze, I recommend serving this sweet loaf as a Thanksgiving dessert, or, even better, for breakfast to give you the sugar kick you need to power through a big turkey dinner!

Ingredients

For the Cinnamon Crumble Topping

  • 1/4 cup Heinen’s organic light brown sugar
  • 1/4 cup Bob’s Red Mill unbleached flour
  • 1 tsp. Heinen’s organic ground cinnamon
  • 4 Tbsp. Heinen's unsalted butter, softened
  • 1 tsp. vanilla extract

For the Cake

  • 1 1/2 cups Bob’s Red Mill unbleached flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 2 tsp. Heinen’s organic ground cinnamon
  • 1 stick Heinen's unsalted butter, melted
  • 3/4 cup granulated sugar
  • 1/4 cup Heinen’s organic light brown sugar
  • 2 large Heinen's cage-free eggs
  • 1 1/2 tsp. vanilla extract
  • 1/2 cup plain fat-free Greek yogurt
  • 1 cup Gala or Honeycrisp apples, peeled and chopped

For the Glaze

  • 1/2 cup powdered sugar
  • 1 Tbsp. milk
  • 1 Tbsp. Heinen's pure organic maple syrup

Instructions

  1. Preheat the oven to 350˚ F. Line a 9×4 loaf pan with parchment paper and spray with cooking spray.
  2. Combine the crumble topping ingredients – brown sugar, flour, cinnamon, unsalted butter and vanilla extract – in a small bowl and mix until crumbly. Set in the freezer.
  3. Combine the flour, baking powder, salt and cinnamon in a mixing bowl. Set aside.
  4. Combine the butter and sugar in a separate large mixing bowl and mix until well combined and fluffy. Add the eggs and vanilla and mix well.
  5. Add the Greek yogurt and dry ingredients and mix well. Fold in the apples.
  6. Pour the batter into the loaf pan and sprinkle the crumble on top. Bake for 60-65 minutes.
  7. Remove from the oven and cool for 15 minutes.
  8. Make the drizzle by whisking the powdered sugar, milk and maple syrup until smooth.
  9. Drizzle the glaze on the cooled loaf and serve.

Notes:

  • Use any type of sweet apple – Gala, Honeycrisp or Fuji are all great in this cake.
  • Baking time will vary for each loaf. At 55 minutes, use a toothpick to test it and bake until the toothpick comes out clean and dry.
