Grilled Scallops with Lemon Chive Butter

Fresh from the sea and flavored with loads of lemon, these sea scallops taste like something you would order from a restaurant menu but they could not be easier to make at home.

Skewered and placed on the grill to achieve the perfect char, all you have to do is whip up a four-ingredient Lemon Chive Butter to add a touch of zesty flare and flavor. 

The result is a gourmet dish that’s easy to make on a busy weeknight, yet elegant enough for a celebration!

Ingredients

  • 1 stick Heinen's unsalted butter, softened
  • 3 Tbsp. fresh parsley, chopped
  • 2 Tbsp. fresh chives, sliced
  • Zest and juice of 1 lemon
  • 1 ½ lbs. fresh sea scallops, foot removed
  • 3 Tbsp. Heinen's olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the grill between 450°F and 550°F.
  2. In a bowl, mix together the butter, parsley, chives, lemon zest, lemon juice, salt and pepper until completely combined. Keep cool in the refrigerator until ready to use.
  3. Pat the scallops dry on all sides with paper towels. Skewer 6-8 scallops with a wooden or metal skewer on the right side of the scallops. Then, skewer the left side of the scallops so they are easy to flip and move on the grill.
  4. Drizzle the olive oil on both sides of the scallops and season with salt and pepper.
  5. Place the scallops on the hot grill and cook for 2-3 minutes per side, or until they have reached medium to medium-well internally and show dark grill marks externally. Remove from the grill.
  6. Serve the scallops with the lemon chive butter.
