Roast Beef & Arugula Sandwich

Ingredients
- 2 slices sourdough bread
- 2 Tbsp Boursin Garlic & Fine Herbs cheese spread
- 1 Tbsp Dick's Horseradish Sauce
- 1 cup baby arugula
- 2 Tbsp pickled red onions
- 4 oz deli roast beef (about 2 slices)
- 2 slices tomato
- Heinen's Fresh Cut Fruit
- Extra virgin olive oil, for toasting
Instructions
- Brush both sides of the sourdough bread lightly with olive oil.
- Toast in a skillet until golden brown and crisp. Set aside.
- Spread the Boursin evenly over one slice of sourdough bread.
- Layer the roast beef over the Boursin, followed by the tomato slices, baby arugula, and pickled red onions.
- Spread the horseradish sauce on the second slice of bread. Top the sandwich with the bread, horseradish side down.
- Slice in half and serve with the cut fruit on the side. Enjoy immediately.
