Ingredients

For the Pizza

  • 1 lb. premade pizza dough
  • 1 Tbsp. Heinen's olive oil
  • 1 tsp. Heinen's oregano
  • 1 cup Heinen's shredded mozzarella
  • 1/4 cup Heinen's Kalamata olives
  • 1/4 cup Heinen's sun-dried tomatoes
  • 1 cup Heinen's feta cheese, divided
  • 1 cup Heinen's arugula
  • 1/4 cup cucumber, diced
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • Oregano and crushed red pepper flakes, for garnish
  • Fresh parsley, for garnish

For the Greek Dressing

  • 1/4 cup Heinen's olive oil
  • 3 Tbsp. Heinen's balsamic vinegar
  • 2 garlic cloves, minced
  • 1 tsp. Heinen's oregano
  • 1/4 tsp. salt
  • 1/8 tsp. black pepper

Instructions

  1. Preheat the oven to 400 ° F.
  2. Roll the dough on a cutting board and shape into a round pizza. You can also use a store-bought pizza crust to save time.
  3. Place the pizza dough on a baking sheet, brush it with the olive oi and sprinkle the oregano over top.
  4. Sprinkle the mozzarella cheese over the pizza.
  5. Top with the olives, sun-dried tomatoes and 1/2 cup feta cheese.
  6. Bake the pizza until the crust is golden and the cheese is golden and bubbly, about 10-12 minutes. (The time will be significantly reduced if you use a baking stone).
  7. While the pizza cooks, combine the arugula, cucumber, tomatoes, 1/2 cup of feta cheese and red onion in a medium-size mixing bowl.
  8. In a Mason jar, combine the olive oil, balsamic vinegar, lemon juice, oregano, salt and pepper. Whisk until mixed. Toss the arugula salad mixture in 2 Tbsp. of the Greek dressing. Add more dressing as needed.
  9. Transfer the pizza to a cutting board and top with the Greek salad.
  10. Sprinkle oregano and crushed red pepper on the pizza and drizzle with a balsamic glaze for extra flavor, if desired. Serve and enjoy!

Notes

  • You can add a variety of other ingredients, like artichoke hearts, roasted red peppers, chickpeas, goat cheese, fresh herbs and spinach.
  • Try using hummus or tzatziki as the “sauce” on the pizza.
