Made with super firm tofu, coconut yogurt, vegan mayo, white miso, lemon juice, and nutritional yeast, it has a tangy flavor and a texture that resembles classic cottage cheese. It’s a great make-ahead recipe to keep in the refrigerator for easy breakfasts, snacks, or light lunches throughout the week.

Vegan Tofu “Cottage Cheese”

Ingredients

  • 12 oz Nasoya Super Firm Tofu, drained
  • 1 Tbsp Muso Miso white miso
  • 1 Tbsp fresh lemon juice or Heinen’s Apple Cider Vinegar
  • ¼ cup Cocojune plain coconut yogurt
  • ¼ cup Follow Your Heart Vegenaise Soy-Free Mayo
  • ¼ tsp sea salt
  • 1-2 Tbsp Bragg Nutritional Yeast
  • Fresh strawberries, blueberries, or peaches, for serving
  • Whole Sprouted Grain Bread, for serving, optional

Instructions

  1. Add the drained tofu to a medium-sized bowl. Using a fork or potato masher, mash the tofu until it resembles the size and texture of cottage cheese curds.
  2. Add the white miso, lemon juice or apple cider vinegar, coconut yogurt, vegan mayo, sea salt, and nutritional yeast.
  3. Stir until well combined and creamy, leaving some texture from the tofu.
  4. Serve in a bowl topped with fresh strawberries, blueberries, or peaches, or spread over toasted Whole Sprouted Grain Bread and top with fruit.
