What’s For Dinner? Chicken and Andouille Gumbo

Ingredients
- Heinen's Tri-Color Diced Peppers
- Lou's Andouille Sausage
- Heinen's Daily Bites Pulled Chicken
- Zatarain's Gumbo Mix
- Tony Chachere's Creole Seasoning
Instructions
- Heat a pot over medium heat. When hot, add your favorite oil and sweat the peppers until they begin to soften.
- Dice the sausage and add to the peppers. Cook until lightly browned.
- Add the gumbo mix and some chicken stock. Season lightly with the Creole seasoning and bring to a simmer. Cover and turn the heat to low.
- Cook until the liquid is absorbed and the rice is tender. Garnish with sliced green onions, if desired.
