What’s For Dinner? Potato Gnocchi with Tomato Ricotta Pesto, Pancetta and Spinach

Ingredients

  • Little Italy in the Bronx Gnocchi Potato
  • Volpi Chopped Uncured Pancetta
  • Heinen’s Baby Spinach
  • Filippo Berio Tomato and Ricotta Pesto
  • Heinen’s Imported Grated Parmigiano Reggiano

Instructions

  1. Cook the gnocchi in rapidly boiling water for 2–3 minutes.
  2. Drain the gnocchi, reserving some cooking water.
  3. Cook the pancetta in a pan over medium heat until crispy.
  4. Add the baby spinach and cook until wilted.
  5. Add the gnocchi and tomato ricotta pesto.
  6. Adjust the consistency with the reserved pasta water.
  7. Season with salt and pepper to taste.
  8. Serve in a bowl.
  9. Garnish with Parmesan cheese.
