What’s For Dinner? Potato Gnocchi with Tomato Ricotta Pesto, Pancetta and Spinach

Ingredients
- Little Italy in the Bronx Gnocchi Potato
- Volpi Chopped Uncured Pancetta
- Heinen’s Baby Spinach
- Filippo Berio Tomato and Ricotta Pesto
- Heinen’s Imported Grated Parmigiano Reggiano
Instructions
- Cook the gnocchi in rapidly boiling water for 2–3 minutes.
- Drain the gnocchi, reserving some cooking water.
- Cook the pancetta in a pan over medium heat until crispy.
- Add the baby spinach and cook until wilted.
- Add the gnocchi and tomato ricotta pesto.
- Adjust the consistency with the reserved pasta water.
- Season with salt and pepper to taste.
- Serve in a bowl.
- Garnish with Parmesan cheese.
